COLD WEATHER COMFORT FOOD OF THE WEEK

DELICIOUS EARLY FALL WARM LENTIL STEW!

In the history of mankind, especially in the Mediterranean area, vegetables have always been key for nutritional value, especially for  protein content. When combined with grains they create a quality protein intake, as  meat and fish were scarce and poorly distributed among the population.

Rich in protein, calories, minerals and carbohydrates, lentils were one of the dietary staples of the Romans. Today they are still important because the total protein intake should include vegetable protein.

The fat content of lentils is very low, as is the fiber content, lower than other legumes. The composition is rich in vitamins B1, B3, and B6, and folic acid. In addition to iron, lentils are also high in minerals such as zinc and selenium (a mineral antioxidant that protects cells against oxidation in the body caused by free radicals).

IT'S FLANTASTIC! MY FAVORITE DESSERTS:

EXCLUSIVE FROM TWINAS LATINAS (CHERI & ANA) MAGAZINE!
  Assorted Flans

COFFEE FLAN

Time: 1h and 30 minutes

Difficulty: Easy

Price: Affordable

(Flan mold is needed)

INGREDIENTS

1/2 tablespoon Water
2 cups Water
4 tablespoons of Sugar
6 Eggs, beaten
1 can of sweetened Condensed Milk
2 tablespoons of Instant Coffee
Whipped Cream.

DIRECTIONS:

Fill a large pan or casserole-baking dish (large enough to accommodate a Flan mold) with water and bring it to a boil on the stove top.

Add four tablespoons of sugar into the flan mold, plus 1/2 tablespoon of water, and heat it until becoming a light brown caramel color (do not burn). Once the caramel is made, take it off the heat.  Carefully add the Flan mold in the middle of the pot or baking dish with the boiling water.

In a mixing bowl add 2 cups of water, the can of sweetened condensed milk, 6 beaten eggs, and 2 tablespoons of instant coffee. Beat well and pour into the Flan mold, over the caramel.

Put the mold back into the pan or baking dish, and cover only the Flan mold with a pot lid, not the entire pot. Leave it boiling but be careful that the water does not boil up and inside the mold.

Water should reach up to about an inch (two centimeters) below the top of the mold. Boil for 60 minutes (1 hour) then remove from heat, and allow to cool. Once cool, turn mold out onto a platter, and top with whipped cream

LATE SUMMER TREAT - TROPIC COOLERS!

Family-Style Beverages

For summer coolers with healthy nutritional value try juicing fruits & vegetables, together or separately.  Drink cold, or freeze for naturally delicious popsicles!

Juicing is easy with a juicer (appliance) which will instantaneously extract  juice, while removing smaller seeds & skin, with a minor amount of prep work, leaving nutrient-rich juices.

Purchase an affordable juicer to start with and make sure to use it at least weekly for maximum health benefits & extra summertime hydration for your family.  Why not grow these fruits and vegetables in your own garden, to ensure toxic pesticides will NOT be ingested by your family?

Watermelon

A small or medium size watermelon can yield an entire gallon of 100 % pure juice, rich in heart-healthy immune-boosting anti-oxidents, naturally sweetened, at a fraction of store-bought prices.
Be sure to select non-GMO or unaltered varieties of fruits and vegetables for your family. Grow your own garden using only  "Heirloom" seeds.

Real watermelons and other plants are supposed to contain seeds as a natural phenomena, designed by our Creator for optimum health and nutrition.

Begin by rinsing and drying the watermelon, cutting it in half and then in sections with a large knife.  Please take all safety precautions, as juicing can get messy and utensils can become slippery.

GUEST WRITER THURSDAY - CHERI MAJORS!

REMARKABLE BENEFITS OF EATING SEAFOOD
Years ago I learned about the benefits of good oils, necessary for the prevention and cure of childhood seizure disorders, as my son suffered with absence and febrile seizures. Good oils such as olive oil, nuts, avocado, and fish helped rebuild the myelin sheath, surrounding nerve fibers, insulating receptors from interrupted signals, which causes seizure activity, more details are in "Childhood Neurological Disorders Can Have Unexpected Natural Cures".
With the myelin sheath repaired, the brain can once again send smooth, uninterrupted transmissions throughout the body, without the use of harmful seizure-suppressant drugs. As exciting as the seizure-free discovery was, new studies now show that good oils are heart-strengtheners, and that fish oils can also combat and cure leukemia!
Curative fish oils, used to combat the blood-cancer disease leukemia, are scientifically explained in the Newsmax article "Can Fish Oil Cure Leukemia?" However the benefits of eating fish and/or taking fish-oil supplements are not confined to helping cure heart disease and leukemia, when used along with other good-oil sources listed above, also help fight acne and psoriasis!
Seafood Offering the Most Benefits:
According to the book "Feed Your Skin, Starve Your Wrinkles" by Allison Tannis, M.S., R.H.N. (Tannis, 2009) the healthiest fish to eat are "sardines, anchovies, salmon, and mackerel which are higher in the omega-3 fatty acids called EPA and DHA." Also declaring "the higher levels of mercury found in fresh tuna, swordfish, shark, grouper, orange roughy, and bluefish are negligible and not a concern."

GUEST WRITER TRAVELOGUE - ANA HERRADON

A SPANISH WALK!

The typical image of Spain, “flamenco” dance, bullfights, “tapas” and the processions of Holy Week, only gives a small idea of the nation's diversity.
Spain has four oficial languages, two major cities of almost equal importance and a diversity   of landscapes greater than in any European country which make of Spain a fascinating country. It is the third largest country in Europe and the distances are long butSpain has a reliable rail network, good roads and bus services.
Separated from the rest of Europe by the Pyrenees, Spain extends south to the North African coast and is bordered by the Atlantic Ocean and the Mediterranean Sea. Its climate and landscape vary dramatically, from the snowy peaks of the Pyrenees through Galicia's green pastures and orange groves of Valencia, to the dry southern regions.
In the middle ages after the Christian reconquest, there were several governors who tried to impose a common culture but contemporary Spain remains a nation of great cultural diversity, where several regions have strong feelings about their own identity.
ANA HERRADON DE MADRID
Catalonia, Basque Country, Valencia, the Balearic Islands and Galicia have their own language which they use every day, in some regions more than in others and, in some cases; it has replaced the Castilian language (known as Spanish) as the first language of the autonomous region.

It is a country with complete freedom of worship but Catholicism continues to exercise a powerful influence on Spanish society.

Spanish citizens are famous for their sociable, friendly nature and his zest for life. They invest the same energy in enjoying life than at work. The popular stereotype of "leave it for tomorrow" is already a myth hardly to find today.

The day in Spain is much longer and at dawn, the streets are full of people continue having fun, especially on weekends.

Eating out is an important and popular social activity in the country, and friends and family often gather on terraces and restaurants to chat and eat.
Spanish society has been always supported on the family institution. In the recent past, the lack of efficient social services forced the Spanish to seek support from their families instead of institutions, when searching for a job or help in case of trouble. So no wonder why three generations of one family lived under the same roof. It is now common to hear from people living in the city how they speak about their village, from which their family is from and they keep visiting it as often as they can.
Madrid, capital of Spain, is a city of over three million inhabitants and is situated near the geographical centre of the country. The city's origins date back to 852, when the Arabs built a fortress near theManzanares River and created a small community around. However, it was not until 1521 that the city got the capital of the nation.
Over the following centuries, first under the Habsburgs and then under the Bourbons, the city incorporated notable monuments such as the magnificent Plaza Mayor and the Royal Palace. At the same time, the burgeoning Madrid attracted renowned Spanish artists, such as court painters Velazquez and Goya, whose works can be admired in the Prado Museum.

SPAIN WINS
2012 EURO SOCCER CUP JULY 2!!
Madrid population is a conglomerate of people coming from all Spanish regions and other countries. Barcelona competes in importance with the capital in the field of commerce, sports and art.In the last fifty years, Spain has suffered numerous social changes.

During the first half of the twentieth century was a country of rural character. Gradually, the people were migrating to cities and depopulated rural areas. The sixties brought the launch of a spectacular economic growth, partly due to the exploitation of the tourism industry. Since thenSpain has come to play an important role in Europe and worldwide.
Many tourists visit Spain only for its beaches but there are an increasing number of tourists attracted by the rich cultural heritage of the country.

The most popular destinations are Madrid and Barcelona, which have important museums and an interesting medieval and modern architectural legacy. Also popular are: Seville, Granada and Cordoba in the south, where the visitor find the relics of the last Arab country.
